Bitter Gourd With Minced Pork

Bitter gourd with minced pork. In a small bowl mix the ground pork with the rice wine ginger sugar and salt. In a saucepan on medium-high heat drizzle a bit of oil and add the minced garlic and 14 lb ground pork. Add in pork neck bones.

Toss in the garlic stir-frying until fragrant and then add the seasoned minced pork cooking until its colour has changedabout 3 minutes. Add pork ribs and continue to fry for another 3 to 4 minutes until opaque and coated with sauce. Place in a bowl and add the soy sauce 2 teaspoons of the rice wine or sherry sugar pepper stirring to combine.

For the ground pork mixture. Place the sliced bitter melon in the boiling water and parboil until it is just tender 2 to 3 minutes. Combine pork 2 tablespoons of soy sauce garlic powder and pepper in a bowl.

Slice the bitter melon into 1 to 1 12. Then add the bitter gourd and cook for a further 3 minutes before seasoning with the soy and oyster sauces. Boil for 15 minutes removing impurities from the top as they float up.
